A quick breakfast idea for people in a hurry but want a heavy breakfast before they head out.
Ingredients
- Eggs (2 x)
- Diced chicken sausage (1/2 cup)
- Diced capsicum (1/2 cup)
- Green chilly (1 x)
- Coriander leaves (a little)
- Sliced cheese (1 x)
Procedure
Mix the all the ingredients in a bowl.
Let it rest for a while (2-3 mins)
Heat a skillet under medium flame.
Put a cube of butter on the skillet and let it melt.
After the butter melts, turn the flame to low.
Spread the butter evenly all around the skillet.
Pour the egg mix on to the skillet and spread it evenly.
Add salt and pepper to taste.
Increase the heat to medium.
Cover and cook for about 3-4 min.
Take off the cover and place the cheese slice on the omelet.
Cover and cook on low flame for a further 3-4 min.
You can eat this on its own or make a sandwich with two slices of bread. To make the taste more interesting, apply mayo and mustard sauce on each slice.
