Cucumber Rice Recipe


This is a typical Caribbean dish which is both easy to prepare and very tasty. It also lends itself easily to experiments.


Ingredients

- Basmati rice (1 cup)

- Cucumber (1 no)

- Onion (1 no)

- Green chilly (4 no)

- Peas (1/4 cup)

- Pepper powder (1 tsp)

- Salt (To taste)


Procedure

- Wash and soak the rice for 20 mins.

- Cut the cucumber in to 1/2 inch cubes.

- Cut the onion into thin slices.

- Cut the chilies into long strips.


  1. Add the rice, cucumber, onion, chilies, and peas to the pan.

  2. Add two cups of water.

  3. Cover and boil on medium flame.

  4. After half the water has evaporated, add the salt and pepper.

  5. Stir, then cover and let cook.
