Soak the following overnight: - Raw rice (3/4 cups) - Toor dal (2 tablespoons) - Moong dal (2 tablespoons) - Green gram dal (2 tablespoons) - Urad dal (2 tablespoons) - Red chillies (4 nos)
Wash soaked mix a couple of times.
Grind the soaked mixture - Do them in two equal batches - For each batch add half a cup of water - Pour them out into one bowl
To the ground mixture, add: - Hing (asafetida) (1/4 teaspoon) - Salt to taste - Curry leaves finely chopped (handful) - Green chillies finely chopped (2 nos)
Stir until it is all mixed in.
Let it rest for about 30 min.
Pour and cook like normal dosa
It is best if you spread it thin and cook it covered. Let it become crisp and begin to release from the edges, then fold and serve.
